Portobello Mushroom Recipes: Spanish Garlic Mushrooms
A simple recipe with some real Spanish flair, flavor and color from using smoked paprika. For some more Spanish flair use a good dry sherry instead of dry white wine.

  1. Quarter the mushrooms, chop the parsley and the garlic.
  2. Place the olive oil in a pan over a moderate heat. Add the mushrooms and cook for 3 minutes, turning occasionally. Add the remaining ingredients except the parsley and cook for a further 7 minutes or so.
  3. Remove from the heat, stir in the parsley and serve onto 4 small plates. Or, if part of a tapas set, place in a serving bowl and allow people to serve themselves at the table.
