How to Make Easy Greek Rice Pudding on the Stovetop
Just watch you don’t burn the milk and make sure it comes to a slow boil.

  1. Melt the butter in a medium sized saucepan over a moderate heat. Add the milk and salt and bring to a slow boil, stirring often. Add the rice, lemon rind and the sugar. Stir and bring back to a low boil. Reduce to a low heat. Continue to cook for 30 minutes, making sure the rice is cooked through.
  2. Remove the rice pudding from the heat and remove the lemon rind. Add the vanilla essence and stir to combine.
  3. Remove a half cup of the milk using a ladle and place in a cup. Put the the whisked egg yolks in a small bowl and slowly add the hot milk to the egg, whisking constantly. Add the egg/milk solution back into the saucepan containing the rice pudding and combine fully. Allow the mixture to cool completely.
  4. Transfer the mixture to 4 serving bowls or fancy glasses. Dust with cinnamon and cool in the refrigerator before serving.
  5. You can optionally garnish your rice pudding with berries.
